  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix together the oil and eggs until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the grated carrots, walnuts, and raisins if using.
  6. Pour the batter into the prepared pan and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
